Fig and Walnut Granola

This is one of my favourite ways to begin the day!

You may not know this about me but I’m a huge granola fan. I ALWAYS have a container of homemade granola stored in the pantry. I usually sprinkle some on top of my yogurt and fresh fruit for breakfast or on top of my oats.

I am OBSESSED with this fig and walnut recipe, it has warming spices and toasty walnuts that just make it extra special.

Not to mention the sweet chewy dried figs are just so yummy and provide a great texture to compliment the walnuts and buckwheat!

(omit walnuts & almonds for oats for nut free version :D)

 

Fig and Walnut Granola

Prep Time: 5 mins

Cook Time: 20 mins

Total Time: 25 mins

 

Ingredients

  • 2 cups oats
  • ½ cup buckwheat groats
  • ½ cup sliced almonds
  • ½ cup walnuts
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp ginger powder
  • ¼ tsp salt
  • ¼ cup olive oil
  • ¼ cup honey
  • ¾ cup dried figs (chopped)

Method

  1. Preheat oven to 160 degrees and line a baking tray with baking paper
  2. In a large bowl, mix together the oats, buckwheat groats, almonds and walnuts
  3. Add the cinnamon, nutmeg, ginger, and salt and toss all together
  4. Next add the olive oil and honey and stir until evenly coated
  5. Spread out evenly on your baking paper, and bank for 20-25 mins or until golden brown
  6. Let cool, then add in the dried figs
  7. Store in an airtight container or mason jar in your pantry

Don't forget to add some dried fruit for some sweet goodness :)
